I have les paul with finished rounded neck.
I'm thinking to transform it to unfinished slim taper.
Can this be done?

Theoretically, yes. Practically, you could plane through
the wood exposing the truss rod channel, or at least
weaken the neck. Your call.

Hold on, he didn't say it was a Gibson...

It's your guitar, do what you like with it. If it's a bolt on, it shouldn't
be too difficult, and if/when you screw it up, you can replace it.

But I agree, if this isn't the guitar you really want, sell it and buy the
one you do want.

If it's a bolt-on, I'd recommend getting a replacement neck and trying
to sand THAT. If you ruin it, your original neck is still good. You can
still sell the guitar and buy a new one. The Zakk Wilde LPs sound like
what you want.

Well, the next question is; do you know what you're doing? I mean in terms
of stripping the finish, sanding, refinishing, etc.

Why not take it to a luthier, have a pro job done?

I would never buy a signature guitar. Any name. (Les Paul is exemption to
the rule:)
